Our “Heavenly Slow Cooker Lamb Stew” is as easy as it gets—just toss your ingredients into the slow cooker and let time work its magic. It’s a fuss-free way to enjoy a hearty, delicious meal that’s both nourishing for your body and your soul.
Ingredients for the stew:
- 2 grass finished/hormone free lamb shanks
- 1 tbsp. corn flour
- Drizzle of olive oil (for searing off the lamb)
- 2 large carrots
- 2 zucchinis
- 1 brown onion
- 3 garlic cloves
- 2 celery stalks
- 3 cups of beef stock or bone broth
- 2 tbsp. of tomato paste
- 1 tbsp. of Dijon mustard or seeded mustard (or a combo of both!)
- 1 sprig of fresh rosemary or 1 teaspoon of dried rosemary
- Salt & pepper
Ingredients for the mash:
- 4 large brown russet potatoes (peeled)
- 2 tbsp. of organic butter
- 1/2 cup organic milk
- Salt to taste
Method for the stew:
- Coat the lamb shanks with the corn flour and salt and pepper. This is easiest done in a shallow baking dish
- Sear the lamb shanks in a skillet with a drizzle of olive oil – do not cook all the way through, just sear off the outside of the shanks until they have browned slightly
- Add lamb shanks, chopped veg besides the zucchini (we will add zucchini later – as it cooks much faster than the heartier veg), liquids, rosemary, tomato paste and mustard to the slow cooker
- Set the slow cooker to low and simmer for 6-8 hours
- Add the chopped zucchini about 4 hours in
- Salt and pepper to taste
Method for mash: (start this with about 30 minutes left on the slow cooker)
- Peel potatoes and cut them into equal sized chunks for even cooking
- Add to a pot with salted water and bring to a boil
- Cook for about 15-20 minutes until tender
- Drain potatoes and add back to pot with the stove turned off to evaporate any remaining liquid
- Mash with a potato masher (or an extra step here is to mix with a hand blender for silky smooth mash – divine!)
- Add butter and milk and stir through
Helpful to note:
- If you find the stew is too watery, add a few spoonful’s of the mash to the liquid and stir through – this will thicken the sauce slightly without needing to add more cornstarch
- The slow cooker will be done when the meat is tender and sliding off the bone. Make sure to remove all bone and any little cartilage that has snuck away
- This recipe tastes even BETTER the next day. This is a fabulous recipe for meal prepped dinners for the next few days
Serve the stew over mash and top with thinly sliced chives or spring onion for an added freshness and crunch.
